Silver warehou are available year round and mainly caught in deep water in the southern half of the South Island. They are a schooling fish with grey or blue backs fading to silver bellies, with spots down the flank, a small head and large eye.
They have a firm white flesh with moderate to high fat content, which holds its shape when cooked. Suitable for all types of cooking.
