Rough Skate (Zearaja nasuta)
Also known as: Whai (Māori), Raie de Nouvelle-Zélande (France), Razza australe (Italy), Gaori (Korea)
The Rough Skate is another endemic New Zealand species, distinguished by its rougher skin texture and broader body shape compared with the Smooth Skate.
It is landed year-round as a bycatch, typically found in waters up to 200 metres deep, and often encountered in shallower areas around the South Island. Sizes range from 45 to 80 cm in length, with weights of 1 to 10 kg.
Once cooked, Rough Skate wings produce long, tender flakes of white meat, ideal for classic European preparations such as raie au beurre noir (skate wing with brown butter and capers), or served simply pan-fried or baked for a delicate, refined presentation.
