Orange roughy are widespread in deep New Zealand waters, at depths of 600 to 1,200 metres. Reddish in body, which fades to orange when captured, they are a very distinctive looking fish.
They have pearly white fillets with a medium texture and coarse flakes, suited to most cooking methods.
