What is King salmon?

King salmon is the premium of all salmonid fish, and is in the same family as trout and char. Its distinctive smooth, creamy flavour and rich oils makes it much more exceptional compared to Atlantic salmon and sea run trout for taste and appearance. Less than 1% of global salmon production is New Zealand King salmon, as this rare species is notoriously difficult to nurture. Big Glory Bay King salmon are sustainably ocean-farmed in the pristine coastal waters of Stewart Island, located at the very bottom of New Zealand.

In New Zealand, King salmon are only found in the South Island. There are wild populations that will swim into Canterbury and Otago braided rivers to spawn, farmed populations in hydro-canals in the Mackenzie Basin, and ocean-farmed populations like Big Glory Bay down in Rakiura, Stewart Island.

King salmon is versatile and can be cooked in various ways, such as grilling, baking, or pan-searing. Do not be afraid to undercook it! Really fresh King salmon, such as Big Glory Bay’s, is excellent to enjoy as sashimi. You can find some
